Tabliering Chocolate

I have recently had the privilege to enter a professional chocolatier program. I make most of the chocolates that we offer but never had any formal training, so in an effort to sharpen my skills and further pursue a personal love, I find myself back in school. Tonight was the classic method of tempering chocolate on a stone slab, called tabliering. It is definitely a skill that takes time and patience to master, but it was great fun. It was also one of the biggest chocolate messes that I have ever made!
P.S. Don’t worry I will not be feeding this chocolate to anyone but myself.
